Smoked Sausage Pepper Hoagies

Smoked Sausage Pepper Hoagies are a quick and easy dinner to add to the menu this week. Smoked sausage with sautéed peppers and onions on a cheesy toasted hoagie bun. 

Meatball Subs are one of the most requested dinners at our house and these Smoked Sausage and Pepper Hoagies are a close second. If we are looking for something really fast, we make Smoked Bologna sandwiches.

Ingredients for Smoked Sausage Pepper Hoagies:

  • Smoked Sausage ~ We used Brisket Smoked Sausage for this recipe, use your favorite.
  • Bell Peppers ~ We used a combination of red and green. 
  • Onions ~ Yellow onions or sweet onions work best.
  • Hoagie Buns ~ burger buns work too. 
  • Butter  ~ salted butter for toasting the hoagie buns.
  • Swiss Cheese ~ Provolone works great too.

How to Make Smoked Sausage Pepper Hoagies:

  • Remove the sausage casings and slice sausage into 3 inch chunks. Slice the chunks in half, longwise. 
  • Cook the sausage in a skillet over medium heat. Our brisket sausage is fatty so I didn’t add any additional oil. If you are using store bought sausage, coat the pan with olive oil. 
  • Cook sausage for 5- 8 minutes until lightly browned and crispy.

  • Remove to a paper towel lined plate. 
  • Reserve 2 tablespoons of drippings or add 2 tablespoons of olive oil to the skillet with diced onions and peppers. 
  • Cook over medium heat, stirring occasionally until caramelized. Remove from heat and set aside.

  • Butter hoagie buns and toast about 3 minutes. 
  • Add Swiss cheese slices to the hoagie buns and toast until cheese is melted.

  • Top the buns with sausage, peppers and onions. 
  • Serve immediately.

Ingredients

  • 1 ¼ pounds Brisket Smoked Sausage or store bought smoked sausage
  • 2 cups sliced onions
  • 2 cups diced bell peppers
  • 4 hoagie buns
  • 2 tablespoons butter
  • 4 large slices Swiss cheese

Instructions

  • Peel the casing from the smoked sausage and slice into 3 inch chunks. Cut in half longwise and place in a large skillet. Cook over medium heat, stirring often until browned and crispy. (If you are using store bought sausage, coat the pan with olive oil.)
  • Remove sausage to a paper towel lined plate and set aside.
  • Cook peppers and onions in drippings from sausage, adding more olive oil if needed. Cook over medium heat, stirring often until caramelized.
  • Spread butter over hoagie buns and toast lightly, about 2 - 3 minutes.
  • Add slices of Swiss cheese and continue to toast until cheese is melted.
  • Top buns with smoked sausage, peppers and onions.
  • Serve immediately.

Notes

Store leftover sandwiches wrapped in plastic wrap in the refrigerator up to 2 days.
Reheat sandwiches wrapped in aluminum foil in a 350° oven for about 15 minutes.
