Ingredients Needed for Veggie Skewers

  • Onions – red onion, sweet onion or yellow
  • Peppers – bell peppers, banana peppers or poblano peppers
  • Broccoli – or Cauliflower
  • Mushrooms – white button or baby bellas
  • Tomatoes – cherry or grape
  • Italian Dressing – homemade or store bought

Seasoning for Vegetable Skewers

  • We are simply using Italian dressing to season these skewers. You can also season with olive oil, lemon juice and spices like garlic, salt and pepper.
  • Brush with BBQ Sauce or balsamic glaze.

Step By Step Instructions

STEP 1 Prep the vegetables by cutting into bite similar sized pieces that will easily go onto the skewers.

STEP 2 Thread onto skewers. If you are using bamboo skewers, soak in water for about 10 – 15 minutes or use metal skewers.

STEP 3 Brush with Italian dressing on all sides.

STEP 4 Prepare a grill fire to 350°. We cooked these on the pellet grill; a charcoal grill or gas grill works well too.

STEP 5 Place vegetable kabobs over indirect fire and cook with the grill closed about 10 minutes.

STEP 6 Brush with more Italian dressing and turn the kabobs. Continue cooking until vegetables are tender, about another 5- 10 minutes.

STEP 7 Remove from grill and serve immediately.

How to Store and Reheat

Storage: Remove from skewers and store in an airtight baggie or container in the refrigerator up to 3 days.

Reheat: Place in a pan or skillet with a tablespoon or two of water and cover. Cook over medium heat for 3- 4 minutes until heated through.

How to Serve Veggie Skewers

These vegetable skewers are a great straight off of the grill. You can also:

  • Sprinkle with grated parmesan cheese.
  • Garnish with chopped fresh herbs like parsley or cilantro.
  • Italian dressing on the side for dipping.
