  1. Assemble the Wontons: Lay a wonton wrapper flat on a clean surface. Place about a tablespoon of brisket mixture in the center. Dip your finger in water and lightly moisten the edges of the wrapper. Fold the wrapper diagonally to form a triangle and press the edges together to seal tightly. Wet two of the points of the triangle and press to the center. Repeat with the remaining wrappers and filling. Keep wontons under a damp paper towel until ready to fry.

  1. Heat the Oil: Pour enough oil into a deep skillet or dutch oven to submerge the wontons. Heat the oil to 375°, using a fry thermometer.
  2. Fry the Wontons: Carefully add a few wontons to the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes, turning, cooking until golden brown and crispy. Use a slotted spoon or tongs to remove the wontons and place them on a paper towel-lined baking sheet to drain any excess oil. Repeat with the remaining wontons.
