For the Ribs
- Spare Ribs or Baby Back Ribs
- Olive Oil
- Kosher Salt
- Coarse Ground Pepper
For the Plum Sauce
- Plum Preserves
- Brown Sugar
- Pineapple Juice
- Apple Cider Vinegar
- Soy Sauce
- Granulated Garlic
- Ground Ginger
- Kosher Salt
- Ground Chili Flakes or Red Pepper
🔥 Step By Step Directions
- Pat ribs dry with paper towels. Slice the racks in half if you need to so that they will fit on your grill.
- Spray or brush with olive oil and season with kosher salt and coarse pepper.
- Prepare your grill fire and make the plum sauce.
- We used our Big Green Egg Ceramic Grill with lump charcoal and pecan chunks for smoke flavor. We used a wire rack to fit 2 whole racks of spare ribs.
5. Place ribs over indirect fire with the grill closed at around 250°.
6. Cook for 1 hour to 1 hour 15 minutes, pour plum sauce over the ribs and brush to coat well.
7. Continue to cook until ribs reach 200° using a digital meat thermometer.
- Total cooking time will depend on the grill and the size of the ribs but should be about 1 ½ - 2 hours total.
8. Remove ribs to a pan. Tent with foil and allow to rest about 15 minutes before slicing.
9. Use a sharp knife to cut ribs between the bones.
Serve with additional plum sauce, coleslaw and Thai Cucumber Salad.

Wrap ribs in plastic wrap or aluminum foil and store in the refrigerator up to 4 days.
To reheat ribs, place on a baking sheet and cook for 10- 15 minutes at 350° or on the stove top in a dry skillet over medium-high heat.
