  1. Prepare the Grill
Set up your grill for a medium-high heat fire around 300°. Use a two-zone fire if using charcoal or indirect heat on a gas grill to prevent burning the butter glaze.
  2. Make the Jalapeno Honey Butter
In a small saucepan, melt butter over low heat. Stir in honey, sliced candied jalapeños and a tablespoon of the jalapeno brine. Keep warm until ready to use.
  3. Prep the Salmon
Pat the salmon fillet dry with paper towels and place it skin-side down on a sheet pan. Brush with olive oil and season with salt and pepper.
  4. Grill the Salmon
Place the salmon over indirect heat, close the lid and cook for about 10 minutes.
  1. Glaze and Finish
Brush half of the jalapeno honey butter over the salmon. Continue grilling with the lid closed for another 5–8 minutes, or until the internal temperature reaches 135°–140° using a digital meat thermometer.
