- 1 salmon fillet
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground pepper
- ¼ cup butter
- ¼ cup honey
- ½ cup candied jalapenos + 1 tablespoon of brine
Prepare a grill fire to 300°.
Pat the salmon fillet dry with paper towels and place it skin-side down on a sheet pan. Brush with olive oil and season with salt and pepper.
In a small saucepan, melt butter over low heat. Stir in honey, sliced candied jalapeños and a tablespoon of the jalapeno brine. Keep warm until ready to use.
Place the salmon over indirect heat, skin side down, close the lid and cook for about 10 minutes.
Brush half of the jalapeno honey butter over the salmon. Continue grilling with the lid closed for another 5–8 minutes, or until the internal temperature reaches 135°–140° using a digital meat thermometer.
Remove the salmon from the grill. Drizzle remaining glaze over the top and let it rest 5 minutes before serving.
- Storage: Leftover salmon can be stored in an airtight container in the refrigerator for up to 3 days.
- Reheat: Heat gently in a skillet over low heat or in a 300° oven just until warmed through. Avoid microwaving, which can dry out the fish.
- Oven Instruction: Preheat oven to 350°. Place salmon on a foil-lined baking sheet and bake for 10 minutes or until salmon reaches 135° using a digital meat thermometer.
