Balsamic Chicken Broccoli Skewers ~ Weeknight Grilling Recipe
We make dinner on the grill as many nights as possible. This chicken and broccoli recipe was a big hit and is really simple to make. An easy dinner for meal prep, cut up the chicken and broccoli and mix the marinade ahead to save time for busy weeknights.
Ingredients Needed:
For the Skewers:
- Chicken Tenders
- Fresh Broccoli
- Balsamic Vinegar
- Lemon Juice
- Olive Oil
- Granulated Garlic
- Ground Rosemary
- Dried Thyme
- Dried Basil
- Kosher Salt
- Black Pepper
For the Cheese Sauce:
- Butter
- Flour
- Milk
- Velveeta or Cheddar Cheese
- Granulated Garlic
- Smoked Paprika
- Salt & Pepper

How to Grill Balsamic Chicken Broccoli Skewers:
- Mix balsamic marinade together in a bowl. Set aside 1/3 cup for grilling.
- Cut the chicken tenders into 1 1/2- 2 inch cubes.
- Mix chicken with marinade. Cover and refrigerate one hour.
- Cut broccoli into spears.
- Prepare grill to about 300° with hickory or pecan for smoke flavor.
- Thread chicken and broccoli onto skewers.
- Spray or brush with olive oil. This Oil Sprayer works perfect.
- Place skewers over indirect fire.
- Brush with reserved marinade and cook with the lid closed.
- Cook for about 15 minutes, brush with marinade once more. Continue to cook another 10-15 minutes. Check with digital thermometer, cooking until internal temperature reaches 165°.
- Remove from grill and cover with foil, resting while you prepare the cheese sauce.
How to Make Cheese Sauce:
- Add butter and flour to a saucepan.
- Cook over medium heat, whisking continually about 2 minutes.
- Add milk and whisk to combine. Cook about 3 -5 minutes until sauce starts to thicken.
- Add cheese and whisk in seasonings.
- Whisk until smooth.
- Remove from heat.
- Drizzle over skewers and serve immediately.
Adding the cheese sauce is optional for this recipe. The skewers are delicious on their own but the cheese sauce adds a creaminess that really compliments the tangy balsamic glaze. Plus broccoli and cheese is a combination that is hard to top.
How to Store and Reheat:
Remove chicken and broccoli from skewers and store in an airtight container in the refrigerator up to 3 days.
Reheat in a skillet with 1 -2 tablespoons of water over medium heat. Stir frequently until heated through, about 3- 5 minutes.

- 1 teaspoon granulated garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
For the Cheese Sauce:
- 1 tablespoon butter
- 1 tablespoon all purpose flour
- 1 cup milk
- 12 oz Velveeta cubed or shredded cheddar cheese
- ¼ teaspoon granulated garlic
- ⅛ teaspoon smoked paprika
- ⅛ teaspoon kosher salt
- ⅛ teaspoon black pepper
Instructions
- Cut chicken into 1 1/2 - 2 inch cubes.
