How to Make Chili Rubbed Ribs:
Mix chili dry rub together in a bowl: brown sugar, granulated garlic, kosher salt, smoked paprika, dry mustard and chili flakes.
- Drizzle ribs with olive oil, rubbing all over.
- Sprinkle rub over ribs, rubbing into meat.
- Prepare grill to a 300 ° fire with hickory or oak for smoke flavor.
- Place ribs over indirect heat and cook with the lid closed for 1 1/2 – 2 hours or until internal temperature of ribs reaches 165°. Cook to 180- 195° for more tender ribs.
- Remove ribs from grill and allow to rest 10 minutes before slicing.
How to Store and Reheat Ribs:
Wrap cooled ribs in foil and refrigerate up to 3 days. Reheat in oven at 350° for 10- 15 minutes or until heated through.

- 2 tablespoons granulated garlic
- 1 tablespoon smoked paprika
- 1 tablespoon dry mustard
- 1 tablespoon kosher salt
- ¼ teaspoon chili flakes
- 2 tablespoons olive oil
- 1 rack spare ribs 6- 7 pounds
