- 4 T-Bone Steaks
- 3 tablespoons olive oil divided use
- ½ cup Best Dry Rub divided use
- 2 cups sliced onions
- 2 cups sliced sweet bell peppers
- 2 cups sliced cherry tomatoes
Allow steaks to come to room temperature about an hour before grilling.
Pat steaks dry with paper towels and layer on a baking sheet.
Drizzle with about 2 tablespoons olive oil and sprinkle with dry rub (reserve 2 tablespoons for vegetables)
Prepare a grill fire to about 350° with hickory or oak for smoke flavor.
Place vegetables in a single layer on a grill pan and drizzle with 1 tablespoon olive oil and sprinkle with about 2 tablespoons Dry Rub.
Add steaks over direct fire and vegetables to indirect fire.
Sear steaks for about 5 minutes, flip and move to indirect heat. Cover and cook another 8 - 10 minutes or until steaks reach desired doneness with a digital thermometer.
Cook vegetables just until softened.
Remove steaks and vegetables from grill and allow steaks to rest 10 minutes before serving with vegetables.
