Ingredients

  • 4 boneless pork chops thick cut
  • 2 tablespoons olive oil plus more for cooking pork chops
  • 2 tablespoons steak rub
  • 10 ounce blackberry all fruit
  • 5 ounces chipotle sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated garlic
  • 1 tablespoon smoked paprika

Instructions

  • Prepare the Sauce: In a small bowl, whisk together blackberry all fruit, chipotle sauce, apple cider vinegar, granulated garlic and smoked paprika until smooth.
  • Season the Pork Chops: Brush pork chops lightly with olive oil and generously season both sides with steak rub.
  • Cook on the Griddle: Preheat your Blackstone griddle to medium-high heat. Add a bit of olive oil and place pork chops on the hot surface and sear for about 3-4 minutes.
  • Flip and Brush: Flip the pork chops and brush generously with the blackberry chipotle sauce. Continue cooking until pork reaches an internal temperature of 145° F using a digital meat themometer.
  • Rest and Serve: Remove pork chops from the griddle, let rest for about 5 minutes, and serve with additional sauce if desired.
