Make the sauce. Add olive oil to a pan and cook onion and carrot over medium heat until softened.
Stir in tomato sauce.
Mix the spices together with brown sugar, salt and red pepper.
Mix into tomato mixture, cook for 5 minutes, stirring often. Set aside and cool slightly. Pizza sauce can be made up to 1 week in advance and stored in an airtight container in the refrigerator.
Roll out pizza dough, forming an 10 -12 inch circle. Fold in the outer edge.
Sprinkle pizza peel or baking sheet (without a rim) with cornmeal.
Place dough onto peel.
Top with pizza sauce in a thin layer.
Add sliced smoked sausage, tomatoes, peppers and onions.
Top with mozzarella cheese.
Prepare a grill fire to about 450° with a pizza stone and hickory for smoke flavor.
Sprinkle the pizza stone with cornmeal.
Slide the pizza onto the stone and close the grill lid.
Lower grill to about 350° and cook for about 3- 5 minutes.
Use a large spatula to turn pizza a ¼ turn and continue to cook with the grill closed.
Continue to rotate pizza about every 3- 5 minutes, cooking until pizza is well browned on the bottom and the cheese starts to bubble. Total cooking time should be about 15- 20 minutes.
Remove from grill and cool about 5 minutes before slicing.
Repeat with remaining ingredients to make 2 pizzas.
Notes
Store cooled pizza slices in a zip top bag in the refrigerator up to 3 days. Reheat on a baking sheet in a 350° oven or toaster oven for about 8 minutes. An air fryer is also great for reheating pizza at 350° for about 3- 5 minutes.
