Remove chicken from packaging and pat dry with paper towels. Place on a rimmed baking sheet.
Drizzle both sides with olive oil and season with salt and pepper.
Prepare a grill fire to 350° using hickory or pecan for hardwood smoke flavor.
Cook chicken over indirect fire with the grill closed for 5 minutes.
Turn the chicken and brush with sauce. Close the lid and cook another 3 minutes.
Turn the chicken once more and brush again with sauce. Continue to cook until chicken reaches 165° using a digital meat thermometer.
Remove from grill and serve immediately.
Storage: Store chicken in an airtight container in the refrigerator up to 4 days.
Reheat: Slice chicken and cook in a skillet coated lightly with olive oil over medium heat, stirring until heated through.
