- 3 pounds chicken tenders or boneless chicken breasts or thighs
- 3 tablespoons olive oil
- ⅓ cup fajita seasoning
Prepare a grill fire or pellet grill to 300°. We used competition pellets for the pellet grill.
Place chicken on a rimmed baking sheet and coat with olive oil.
Sprinkle with fajita seasoning, tossing to coat.
Place chicken tenders onto the grill and cook with the lid closed.
Cook 15- 20 minutes cooking until chicken reaches 165° using a digital meat thermometer.
Remove from grill and serve immediately.
Store in an airtight container in the refrigerator up to 4 days.
Reheat in a skillet coated with olive oil over medium heat, turning after a few minutes to heat from both sides.
