- 4 chicken thighs skin on, boneless
- 3 tablespoons yellow mustard
- 1 ½ tablespoons maple syrup
- 1 tablespoon granulate garlic
- 1 tablespoon dried thyme
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 3 tablespoons olive oil divided use
- 2 onions sliced
- 2 bell peppers sliced
- 1 tablespoon Out Grilling SPG Seasoning or grilling rub
Prepare a grill fire to 350°.
In a bowl, combine yellow mustard, maple syrup, granulated garlic, dried basil, dried oregano, kosher salt, and black pepper.
Coat the meat side of the chicken thighs generously with the mustard mixture, spreading evenly.
Roll the chicken thighs up and place on a pan, skin side up. Drizzle with about 1 tablespoon olive oil and sprinkle with rub.
Grill chicken thighs over indirect heat for about 15-20 minutes, until internal temperature reaches 165°F.
Cook peppers in onions in a skillet coated with 2 tablespoons olive oil over medium heat, stirring occasionally until softened. Keep warm until ready to serve.
Remove chicken from the grill and let chicken rest for 5 minutes before serving over vegetables.
- Storage: Store leftover chicken thighs in an airtight container in the refrigerator for up to 3 days.
- Reheating: Reheat chicken in an oven at 350°F until warmed through, or quickly reheat on in a skillet over medium heat.
- Skillet Method: Sear chicken thighs in a well oiled skillet, skin side down. Flip the chicken and finish cooking in a 400° oven for 15 - 20 minutes or until internal temperature reaches 165°.
