- 7-10 pound bone-in half ham
- 1 cup apple juice
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon granulated garlic
- 1 tablespoon butter
- 1 teaspoon kosher salt
- ⅓ cup Sweet Garlic and Onion Rub
Make the marinade by combining apple juice, brown sugar, mustard, garlic, butter and salt in a saucepan. Cook over medium heat until butter is melted, whisking until sauce is well combined. Set aside to cool to room temperature.
Place the ham on a rimmed baking sheet. Use an injector to marinate the ham in about 1/2 inch intervals with the apple juice mixture.
Sprinkle garlic and onion rub over the entire ham. Use a brush to mop excess marinade and rub onto the ham.
Prepare a grill fire to about 250° using hickory or pecan for smoke flavor.
Cook the ham over indirect fire with the grill closed for about 1 1/2 hours. Check with a digital meat thermometer, cooking until the center of the ham reaches 140°.
Remove from grill and rest for 15 minutes before slicing.
Slice ham with a sharp knife into thin slices.
Wrap ham in several layers of plastic wrap or store in a zip top bag in the refrigerator up to 4 days. Vacuum sealed ham can be stored in the refrigerator up to 7 days or freeze up to 3 months.
To reheat sliced ham, place in a skillet coated with olive oil and cook over medium heat, turning after 2 minutes, to crisp both sides.
