Blackstone Chicken Fried Rice

- 4 boneless chicken thighs cut into bite size pieces
- 2 tablespoons olive oil
- 2 tablespoon Out Grilling Sweet BBQ Rub or favorite grill seasoning
- ⅔ cups soy sauce
- 2 teaspoons toasted sesame oil
- 1 large red bell pepper diced
- 3 carrots diced
- 2 bunches green onions sliced, white parts and green parts separated
- 4 garlic cloves minced
- 6 cups cooked white rice chilled
- 1 tablespoon sesame seeds optional for garnish
- beef tallow or cooking oil for the griddle
Hot Sesame Honey
- ½ cup honey
- 2 teaspoons hot sauce
- 1 teaspoon toasted sesame oil
- 1 garlic clove grated or finely minced
Toss the diced chicken with olive oil and Out Grilling Sweet BBQ Rub. Pour half of the soy sauce mixture over the chicken and stir to coat evenly.
In a small bowl, whisk together the soy sauce and toasted sesame oil.
Preheat to medium-high heat. We season ours with beef tallow and add a light coating as the griddle heats up, use your favorite high smoke point oil.
Add the bell peppers, carrots, white parts of green onions and minced garlic. Stir-fry for 4-5 minutes until slightly softened.
Push the veggies to the side. Place the seasoned chicken on the hot griddle. Cook for about 5-7 minutes, stirring occasionally until browned and cooked through. Chicken should reaches 165° using a digital meat thermometer.
Spread the chilled rice over the griddle and allow it to crisp up slightly. Drizzle the remaining soy sauce mixture over the rice and stir to combine everything together.
Sprinkle sesame seeds and sliced green onions over the top. If using the Hot Sesame Honey, whisk together the honey, hot sauce, and sesame oil and drizzle over the fried rice before serving.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheating: Reheat in a skillet over medium heat with a drizzle of sesame oil for the best texture.
- Skillet Instructions: If you don’t have a griddle, cook the chicken in a large skillet, then remove and stir-fry the veggies. Add the rice, allow it to crisp up, then drizzle with the remaining soy sauce mixture. Return the chicken to the pan and combine everything.
