Bacon Smash Burgers

Bacon Smash Burgers with homemade Smash Burger Sauce are a flavor-packed favorite for the griddle. Easy to make and loaded with crispy bacon and melty cheese!

Ingredients

  • 2 pounds ground beef use ground brisket for extra flavor
  • 8 slices bacon
  • 2 tablespoons Out Grilling SPG Seasoning or favorite grill seasoning
  • 8 slices American cheese
  • lettuce
  • ¼ red onion sliced
  • 4 burger buns

Burger Sauce

  • ¾ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon yellow mustard
  • cup diced sweet pickles or pickle relish
  • 1 tablespoon pickle juice
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1 teaspoon smoked paprika
  • ½ teaspoon fine ground pepper

Instructions

  • Divide the ground beef into ¼ pound patties.
  • Cook bacon on the Blackstone over medium heat or bake the bacon until crispy. Set aside on paper towels to drain.
  • Place the beef patties on the hot surface, season with Out Grilling SPG. Smash flat with a spatula or burger press. Cook 2-3 minutes until the edges crisp up.
  • Flip the patties, top with American cheese, and cook another 1-2 minutes until the cheese melts and the burgers hit 165°F internal temp.
  • Toast the buns if you like. Spread smash burger sauce on both sides. Add lettuce, red onion, a cheesy patty or two, bacon slices and top bun.

Make the Smash Burger Sauce

  • In a small bowl, combine mayonnaise, ketchup, mustard, sweet pickles, granulated garlic, granulated onion, smoked paprika, kosher salt, and black pepper. Stir until smooth. Cover and refrigerate until ready to use.

Notes

  • Store: Keep leftover patties and bacon in an airtight container up to 3 days.
  • Reheat: Use a covered skillet over medium heat with a tablespoon or two of water for best texture.
  • Sauce: Store extra sauce in a sealed container in the fridge for up to 1 week.
