BBQ Cowboy Beans

BBQ Cowboy Beans are a delicious addition to any cookout. Meaty pinto beans slow cooked in our sweet and tangy bbq sauce for a tasty side dish and it's hearty enough for a main dish.

Ingredients

  • 1 pound 80/20 ground beef
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • 2 cups diced onion
  • 1 bell pepper seeded and diced
  • 3 cans 16 oz each Pinto Beans
  • 3 cups sweet and tangy bbq sauce
  • 3 small jalapeños sliced, seeds removed

Instructions

  • Brown ground beef seasoned with salt and pepper in a large skillet over medium heat, breaking it as it cooks. Drain excess grease if needed, reserving 1- 2 tablespoons in the skillet.
  • Add the diced onions and bell peppers, continuing to cook until vegetables are softened. Remove from heat.
  • Rinse and drain the pinto beans.
  • Add pinto beans and bbq sauce to the ground beef mixture, stir to combine.
  • Pour into a foil pan and top with jalapeño slices.
  • Place on a 250° grill.
  • Cook with the grill closed 1 hour to 1 hour 30 minutes until beans are heated through.
  • Serve immediately.

Notes

Leftover beans can be stored in a covered dish in the refrigerator up to 4 days,
Reheat in a skillet over medium heat, stirring until heated through.
