- 1 pound 80/20 ground beef
- 2 tablespoons Steak Rub
- 4 slices Swiss cheese
- 2 tablespoons butter
- 8 ounces mushrooms baby bellas or white
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 4 burger buns
- Condiments: mayonnaise pickles, red onion slices
Prepare a grill fire to 350° using hickory or pecan for smoke flavor.
Make the burger patties into 1/4 pound, thin patties. Season with steak rub on both sides.
Slice the mushrooms and saute in a skillet over medium heat. Season with salt and pepper, stir occasionally until golden brown. Remove from heat and set aside.
Cook burger patties over direct fire for 4 minutes.
Flip the burgers and continue to cook until burgers reach 160° using a digital meat thermometer.
Add the Swiss cheese to the burger patties. Close the grill and cook for 2- 3 minutes until cheese is melted. Remove from grill.
Make the burgers by topping the buns with Swiss burgers, top with sliced mushrooms and your favorite condiments.
Store leftover burger patties in a zip top bag in the refrigerator up to 3 days.
Reheat burger patties in a skillet with 2 tablespoons of water. Cover and cook over medium heat 5 minutes or until heated through.
