- 4 pork chops boneless, thick-cut
- 2 tablespoons olive oil
- ¼ cup Pork Rub
Pat pork chops dry with paper towels. Place on a clean baking sheet and coat both sides with olive oil.
Sprinkle pork rub over both sides of pork chops, pressing the rub down onto the pork chops. Set aside at room temperature.
Prepare a grill fire to 300° using hickory or pecan for smoke flavor.
Grill pork chops over indirect fire with the grill closed for 5 minutes.
Flip the pork chops and continue to cook another 8- 10 minutes until pork reaches 145° using a digital meat thermometer.
Remove from grill to a serving platter. Rest pork chops 10 minutes before serving.
Store pork chops wrapped in plastic wrap in the refrigerator up to 4 days.
Reheat sliced pork chops in a skillet coated in olive oil over medium heat. Stir to heat from both sides.
