Garlic Butter Standing Rib Roast

Garlic Butter Standing Rib Roast is an elegant holiday meal that is so simple to cook on the grill. Seasoned with our favorite toasted garlic butter for a delicious crust for the most flavorful prime rib.

Ingredients

  • 10 pound Bone-In Prime Rib Beef Roast
  • ½ cup salted butter
  • 2 tablespoons minced garlic
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground pepper
  • 2 teaspoons brown sugar

Instructions

  • Prepare a grill fire to 250° using hickory or pecan for smoke flavor.
  • Set the prime rib on a rimmed baking sheet and pat dry with paper towels.
  • Melt butter in a small skillet over low heat. Add minced garlic and cook, stirring often until garlic is lightly toasted. Remove from heat and add rosemary, thyme, salt and pepper. Set aside 2 minutes. Stir in brown sugar until dissolved.
  • Spoon toasted garlic butter over the roast, rubbing it to cover the meaty sides of the roast.
  • Place over indirect fire and cook with the grill closed for about 15- 20 minutes per pound.
  • Test roast using a digital thermometer into the center of the roast, cooking to desired temperature.
  • Remove from grill to a clean baking sheet, tent with foil and rest 20 minutes before slicing.

Notes

INTERNAL TEMPERATURE FOR STANDING RIB ROAST:

  • Rare: 120 -125°
  • Medium Rare 130 – 135°
  • Well Done 140 – 145°

How to Store and Reheat:

Wrap roast in several layers of plastic wrap and store in the refrigerator up to 4 days. Add a layer of foil or place in a zip top freezer bag to freeze up to 3 months.
Reheat sliced prime rib in a skillet coated in olive oil over medium heat, turning after about 2 minutes and continue to cook until warm.
