- 2 pounds boneless sirloin steak
- 4 ounces thin sliced ham
- 4 large slices Swiss cheese
- 2 tablespoons olive oil
- ¼ cup Steak Rub
Prepare a grill fire to 320° using hickory or pecan for smoke flavor.
Pat steaks dry with paper towels. Trip fat from around the edges.
Use a sharp knife to slice the steaks into about 1/4 inch thick steaks.
Layer ham and Swiss slices the length of each steak.
Roll up from the short side and secure with a wooden skewer.
Spray or brush the steak rolls with olive oil.
Sprinkle with dry rub over the entire outside of the rolls.
Use kitchen shears to trim the skewers down to make the rolls easier to move around the grill.
Grill steak rolls over indirect fire with the grill closed for about 15 - 20 minutes. Use a digital thermometer to check the steak, cooking until internal temperature reaches about 140° near the center. We cooked these for about 30 minutes total.
Remove from grill and allow to rest 10 minutes.
Discard the skewers. Use a sharp knife to cut each steak into thin slices.
Serve on a platter.
White BBQ Sauce is a great to serve alongside the steak cordon bleu.
Store leftovers in an airtight container in the refrigerator up to 4 days.
Reheat in a skillet coated in olive oil over medium heat, turning to heat from both sides.
