Grilled Chicken Tacos

Grilled Chicken Tacos are a quick and easy weeknight dinner made with grilled chicken tenders. Skip the drive thru and have a healthy and delicious meal on the table in under 30 minutes.

Ingredients

  • 1 pound chicken tenders
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 8 soft taco flour tortillas or crunchy taco shells
  • 1 cup shredded lettuce
  • ½ cup shredded cheddar cheese
  • ½ cup chunky salsa
  • ½ cup sour cream
  • ¼ cup diced tomatoes
  • ¼ cup diced red onion
  • ½ cup guacamole
  • 2 tablespoons chopped cilantro optional

Instructions

  • Prepare a grill fire to 350° using hickory or pecan for smoke flavor. 
  • Coat chicken tenders with olive oil.
  • Sprinkle with taco seasoning over all sides.
  • Place chicken over indirect fire and cook with the grill lid closed for about 7 - 10 minutes.
  • Flip the chicken and continue to cook another 5- 10 minutes, using a digital thermometer, cooking to 165°. 
  • Remove from grill and rest 5 minutes. 
  • Dice the chicken.
  • Serve chicken on warmed flour tortillas or toasted taco shells with your favorite toppings.

Notes

How to Store and Reheat:

  • Store leftover grilled chicken in an airtight container in the refrigerator up to 4 days.
  • Freeze grilled chicken up to 3 months.
  • Reheat in a skillet over medium heat, add 1-2 tablespoons of water, stir occasionally until heated through.
