- 4 pork chops
- 2 tablespoons olive oil
- ¼ cup Steak Rub
Prepare a grill fire to about 350° with hickory or pecan chunks for smoke flavor.
Pat pork chops dry with paper towels.
Drizzle pork chops with olive oil, coating both sides. Sprinkle rub evenly over pork chops, seasoning both sides.
Cook over indirect fire with the grill closed for 5 minutes. Flip pork chops and continue to cook another 8 - 10 minutes until pork chops reach 145° using a digital meat thermometer.
Remove from grill and allow to rest 10 minutes before serving.
Store pork chops in an airtight container in the refrigerator up to 4 days.
Slice pork chops and reheat in an olive oil coated skillet over medium heat, turning after a few minutes. Cook until heated through.
