Grilled Meatloaf

Grilled Meatloaf is a super simple weeknight dinner that is filling and full of flavor. Ground beef, onions and our easy steak rub gets smoky and delicious and can be ready in under an hour.

Ingredients

  • 1 pound ground beef 70/30
  • ¾ cup diced onion
  • 1 large egg
  • ¼ cup steak rub

Instructions

  • Prepare a grill fire to about 350° using hickory or pecan for smoke flavor.
  • Mix the ground beef, dicd onion, egg and steak rub together in a bowl using your hands or a wooden spoon.
  • Shape into a loaf.
  • Make a foil pan out of 2 layers of heavy duty aluminum foil with a rim around the edge.
  • Place meatloaf on the foil and place foil onto a grill pan.
  • Cook over indirect fire with the grill closed for about 35- 45 minutes. Cook until meatloaf reaches 165° with a digital meat thermometer.
  • Remove from grill, rest 10 minutes.
  • Transfer to a serving platter. Slice and serve.

Notes

Store leftovers in an airtight container in the refrigerator up to 3 days.
Reheat slices in a skillet coated with olive oil over medium heat for about 2- 3 minutes on each side.
