Instructions

  • Prepare a grill fire to about 350°. Hickory or pecan chunks will add smoke flavor.
  • Soak bamboo skewers in water for 10 minutes.
  • Cut spam into 1 1/2 inch chunks
  • Cut ends and outer peel from pineapple. Cut into 1 1/2 inch chunks and discard the core.
  • Thread onto skewers.
  • Brush or spoon bbq sauce over spam and pineapple.
  • Place skewers over indirect fire. If you didn't soak bamboo skewers, place a piece of foil under the sticks to prevent burning.
  • Cook kabobs with the grill lid closed about 15 minutes or until pineapple starts to caramelize and spam reaches an internal temperature of 145° using a digital meat thermometer.
  • Remove to a serving platter and serve with additional bbq sauce for dipping.

Notes

Store leftover kabobs wrapped in foil or remove from skewers and place in an airtight container. Refrigerate up to 4 days.
Reheat spam and pineapple in a skillet with additional bbq sauce and one tablespoon of water. Cook over medium heat, stirring until heated through.
