Prepare a grill fire to about 350°. Hickory or pecan chunks will add smoke flavor.
Soak bamboo skewers in water for 10 minutes.
Cut spam into 1 1/2 inch chunks
Cut ends and outer peel from pineapple. Cut into 1 1/2 inch chunks and discard the core.
Thread onto skewers.
Brush or spoon bbq sauce over spam and pineapple.
Place skewers over indirect fire. If you didn't soak bamboo skewers, place a piece of foil under the sticks to prevent burning.
Cook kabobs with the grill lid closed about 15 minutes or until pineapple starts to caramelize and spam reaches an internal temperature of 145° using a digital meat thermometer.
Remove to a serving platter and serve with additional bbq sauce for dipping.
Store leftover kabobs wrapped in foil or remove from skewers and place in an airtight container. Refrigerate up to 4 days.
Reheat spam and pineapple in a skillet with additional bbq sauce and one tablespoon of water. Cook over medium heat, stirring until heated through.
