Prepare a grill fire to 300° with pecan or hickory.
Pat pork chops dry with paper towels and place on a baking sheet.
Season with salt and pepper.
Cook pork chops over indirect fire with the grill closed for about 10 minutes.
Flip pork chops and baste with Rosemary Mustard BBQ Sauce.
Continue to cook with the lid closed until internal temperature of pork chops reaches 145° with a digital thermometer.
Rest pork chops about 10 minutes before serving.
Store leftover pork chops wrapped in plastic wrap in the refrigerator up to 3 days.
To reheat, slice and cook in a skillet with additional rosemary mustard bbq sauce over medium heat. Stir frequently cooking until heated through, about 5 minutes.
