Pellet Grill Smashed Potatoes are a great side dish for any meal on the grill. Yukon gold baked potatoes smashed and cooked until crispy with garlic butter and melted cheese.

Ingredients

  • 4 Yukon gold potatoes small to medium sized
  • ¼ cup melted butter
  • 1 teaspoon kosher salt
  • 2 teaspoons fresh ground pepper
  • ½ cup shredded cheddar cheese
  • ¼ cup sweet and tangy bbq sauce

Instructions

  • Preheat pellet grill to 375°.
  • Scrub potatoes and pierce with a fork.
  • Place on a pellet grill cooking for about 1 hour until softened.
  • Remove from grill and cut potatoes in half.
  • Line a rimmed baking sheet with parchment paper or aluminum foil.
  • Place potatoes cut side down on the parchment paper.
  • Use a glass or potato masher to mash the potatoes flat.
  • Spoon melted butter over each potato.
  • Season with garlic, salt and pepper.
  • Top with shredded cheese and bbq sauce.
  • Return to the grill, cooking until potatoes are crisp around the edges, about 30 minutes.
  • Remove from grill and serve immediately.
