BBQ Bacon Onion Baked Potatoes

BBQ Bacon Onion Baked Potatoes are a tasty side dish to make on the grill to serve with steak or just about any meal.

Ingredients

  • 5 russet baking potatoes
  • 4 slices thick cut bacon
  • 1 large onion sliced thin
  • 3 tablespoons butter
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 1 ¼ cup shredded colby-jack cheese
  • ½ cup sweet and tangy bbq sauce
  • 2 tablespoons chopped parsley optional garnish

Instructions

  • Scrub potatoes and dry. Pierce with a fork.
  • Cook on a pellet grill at 375° - 400° for 1 to  1 ½ hours or until potatoes are tender.  Use a digital thermometer, cooking to about 200°.
  • Meanwhile, sauté diced onion in butter, season with salt and pepper.
  • Cook the bacon until crispy. Drain on paper towels. Chop into small pieces.
  • Remove potatoes from the grill and cool slightly.
  • Slice potatoes in half, lengthwise. Use a fork to scrape the potato flesh so that the flavor of the toppings go down into the potatoes.
  • Top with caramelized onions, cheese, bbq sauce and crispy bacon pieces.
  • Return to the grill for 10 minutes or until cheese is melted.
  • Remove from grill and garnish with parsley if desired.

Notes

Optional Garnishes: Sliced green onions, chives, sour cream or candied jalapeños are great additions to baked potatoes.
Variations: Use any type of cheese you like. Pepper-jack, cheddar or smoked gouda are great options.
Storage: Store leftover baked potatoes in an airtight container in the refrigerator up to 4 days.
Reheat: Place potatoes on a lined baking sheet and cook in a preheated 350° oven for 10 -12 minutes or until heated through.
