Ingredients

  • 2 racks baby back ribs
  • 2 teaspoons kosher salt
  • 1 teaspoon coarse black pepper
  • 1 cup Orange BBQ Sauce

Instructions

  • Prepare a grill fire to 250° with pecan or hickory for smoke flavor.
  • Remove ribs from packaging and pat dry with paper towels. Remove the membrane from the bone side. Use a sharp knife to loosen it and then pull it off and discard.
  • Season the ribs with kosher salt and black pepper.
  • Place ribs bone side down on the grill and cook with the grill closed for 1 hour.
  • Remove ribs to a clean sheet pan.
  • Brush with a thick layer of bbq sauce.
  • Make a sealed foil packet around the ribs.
  • Return to the grill (we moved the ribs over to our pellet grill) or place in the oven keeping the grill between 250 and 275° with the grill closed. Continue to cook 1 hour or until internal temperature reaches 205° using a digital thermometer.
  • Remove from grill and carefully open the packet. Rest for 10- 15 minutes before slicing and serving.

Notes

Store ribs in a zip top bag or wrapped in foil in the refrigerator up to 4 days.
Reheat in a 350° oven on a sheet pan covered with foil for 8 - 10 minutes or until heated through. Brush with additional sauce if desired.
