Italian Grilled Pork Chops with Zucchini

Ingredients

  • 4 thick cut boneless pork chops
  • cup olive oil
  • 3 tablespoons balsamic vinegar
  • ¼ cup Italian Rub

For the Zucchini

  • 3 small zucchini
  • 3 tablespoons olive oil
  • 3 tablespoons Italian Rub

Instructions

  • In a pie plate or shallow bowl, combine 1/3 cup olive oil with 3 tablespoons balsamic vinegar and 1/4 cup of Italian rub.
  • Pat the pork chops dry with paper towels and place into the marinade. Flip the pork chops over several times to coat completely.
  • Cut the zucchini into wedges. Drizzle with 3 tablespoons olive oil and sprinkle with 3 tablespoons Italian rub. Toss to coat.
  • Prepare a grill fire to 350° using pecan or hickory for smoke flavor.
  • Place the pork chops onto the grill, discarding remaining marinade. Place the zucchini around the edge of the grill. Cook with the lid closed 5 minutes.
  • Flip the pork chops and turn the zucchini. Continue cooking until pork chops reach 145° using a digital meat thermometer.
  • Remove pork chops and zucchini to a serving platter. Rest 5 minutes before serving.

Notes

Store leftover pork chops and zucchini in an airtight container in the refrigerator up to 4 days.
Slice pork chops before reheating. Place pork chops and zucchini in a skillet coated with olive oil over medium heat. Stir often until heated through.
