- 2 Racks Spare Ribs
- ¼ cup olive oil
- 1 tablespoon kosher salt
- 1 tablespoon coarse ground pepper
- 1 cup Plum Sauce
Pat ribs dry with paper towels. Slice the racks in half if you need to so that they will fit on your grill.
Spray or brush with olive oil and season with kosher salt and coarse pepper.
Prepare your grill fire to 250° using hickory or pecan for smoke flavor.
Place ribs over indirect fire with the grill closed at around 250°.
Cook for 1 hour to 1 hour 15 minutes, pour plum sauce over the ribs and brush to coat well.
Continue to cook until ribs reach 200° using a digital meat thermometer about 1 1/2 - 2 hours total.
Remove ribs to a pan. Tent with foil and allow to rest about 15 minutes before slicing.
Use a sharp knife to cut ribs between the bones.
Store leftover ribs wrapped in plastic wrap or foil in the refrigerator up to 4 days.
Reheat on a baking sheet at 350° for 10- 15 minutes with additional sauce if desired.
