Ingredients

  • 2 racks pork spare ribs
  • 3 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 2 tablespoons coarse ground pepper
  • 1 cup Root Beer BBQ Sauce

Instructions

  • Remove ribs from packaging and pat dry with paper towels.
  • Place on a rimmed baking sheet. You can use a sharp knife to loosen the membrane on the bone-side of the ribs and remove it if desired. We prefer to leave it on.
  • Brush or spray olive oil over the ribs.
  • Season with salt and pepper.
  • Prepare a grill fire to 250° - 275° with pecan or hickory for smoke flavor.
  • Place ribs, bone side down on the grill.
  • Cook with the grill closed for 1 hour to 1 hour 15 minutes.
  • Brush with Root Beer BBQ Sauce in a thick layer. Close the lid and continue to cook, brushing with bbq sauce once more. Cook until ribs reach 200° using a digital meat thermometer. We cooked these ribs about 2 hours total, that will vary according to the size of the ribs.
  • Remove from grill. Tent with foil and rest 15 minutes before slicing.

Notes

  • Store leftover ribs in a zip top bag or wrapped in foil in the refrigerator up to 4 days.
  • Reheat in a 350° oven on a sheet pan. Brush with sauce and cover with foil. Bake for 10- 15 minutes until heated through.
