- 1 ½ pounds pork loin cut into 1 inch chunks
- 1 cup sliced onions
- 1 cup sliced banana peppers or bell peppers
- 1 cup Plum Sauce
Prepare a grill fire to about 325° using pecan or hickory for smoke flavor.
Thread chunks of pork alternating with peppers and onions onto skewers.
Pour 1/2 cup of plum sauce into a bowl and brush over the pork and vegetables on both sides.
Grill kabobs over indirect fire with the grill closed about 8 minutes.
Brush with plum sauce and turn the kabobs. Brush once more with sauce and continue to cook another 6-7 minutes or until pork reaches 145° using a digital meat thermometer.
Remove from grill and serve immediately.
Store leftover pork and vegetables, removed from skewers in an airtight container in the refrigerator up to 3 days.
Reheat in a pan with plum sauce over medium heat, stirring often until heated through.
