- 1 ½ pounds beef stew meat
- 1 tablespoon olive oil
- 3 tablespoons brown sugar
- 1 tablespoons black pepper
- 1 tablespoon granulated garlic
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 8 cups beef broth
- 2 cups diced potatoes
- 2 cups sliced carrots
- 2 cups sliced celery
- 1 medium onion diced
- 1 cup frozen corn
- 1 cup farro
- 1 tablespoon minced garlic
Prepare a grill fire to 300° with hickory wood.
Pat stew meat dry with paper towels.
Place stew meat in a bowl and toss with olive oil.
In a small bowl combine brown sugar, black pepper, garlic, smoked paprika and salt. Toss with stew meat until well coated.
Place stew meat over indirect fire on a grill pan in a single layer. Close the lid and cook about 30 - 45 minutes.
Remove from grill and set aside. Stew meat can be placed in an airtight container and refrigerated up to 2 days before preparing soup.
Add beef broth to a large soup pot and bring to a boil.
Add stew meat, chopped vegetables, corn and farro, stirring to combine. Lower heat slightly and continue to cook at a low boil for 30 minutes.
Cover pan and lower heat to a simmer. Cook for one hour, stirring occasionally.
