Pulled Pork Bowls

Pulled Pork Bowls are a quick and easy meal loaded with smoky barbecue pork, cilantro lime rice, black beans, and a drizzle of hot honey for the perfect sweet and spicy bite.

  • Warm pulled pork in a skillet over medium heat. Sprinkle with Out Grilling Sweet BBQ Rub and stir until warmed through and crisp around the edges.
  • Prepare the rice.
  • Rinse and drain the beans. Add olive oil or bacon grease to a skillet with 1 cup diced onion. Sauté onion for about 5 minutes. Add beans and season with salt and pepper. Heat the black beans until warmed.
  • Spoon rice into each bowl, top with pulled pork and black beans.
  • Drizzle with hot honey and garnish with cilantro.

Notes

  • Store leftovers in separate airtight containers for up to 3 days.
  • Great for meal prep: assemble the components ahead and drizzle with hot honey just before serving.
  • Reheat leftovers in a pan with a tablespoon or two of water, stirring until heated through.
  • Try swapping the black beans for pinto beans or the rice for quinoa.
