Garlic and Cracked Pepper Steaks

Garlic and Cracked Pepper Steaks are seared to perfection on the grill for a quick and easy meal that will taste just as good, if not better than the fancy steakhouse.

Ingredients

  • 3 - 4 Strip Steaks
  • 2 tablespoons melted duck fat or olive oil
  • 2 large garlic cloves minced
  • 1 tablespoon coarse cracked peppercorns
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika

Instructions

  • Pat steaks dry with paper towels and place on a sheet pan.
  • Brush with melted duck fat or olive oil on both sides.
  • Sprinkle with minced garlic, coarse cracked peppercorns, kosher salt and smoked paprika, rubbing the seasoning down into the steaks. 
  • Prepare a grill fire to 350° using pecan or hickory for smoke flavor.
  • Sear steaks for 3 minutes with the grill closed.
  • Turn the steaks and continue to cook for 3- 5 minutes or until steaks reach desired temperature using a digital meat thermometer. We cooked these steaks to about 125°.
  • Remove steaks to a clean sheet pan and allow to rest 10 minutes before serving. Tent with foil to keep warm.

Notes

Temperature for Strip Steaks:
  • Rare:  130°
  • Medium Rare: 140°
  • Medium: 155°
Wrap leftover steak in a couple of layers of plastic wrap and store in the refrigerator up to 4 days.
Reheat sliced steak in a hot skillet coated with butter or olive oil. Stir occasionally until heated through.
