Ingredients
3 - 4Strip Steaks
2tablespoonsmelted duck fat or olive oil
2large garlic clovesminced
1tablespooncoarse cracked peppercorns
1teaspoonkosher salt
1teaspoonsmoked paprika
Instructions
Pat steaks dry with paper towels and place on a sheet pan.
Brush with melted duck fat or olive oil on both sides.
Sprinkle with minced garlic, coarse cracked peppercorns, kosher salt and smoked paprika, rubbing the seasoning down into the steaks.
Prepare a grill fire to 350° using pecan or hickory for smoke flavor.
Sear steaks for 3 minutes with the grill closed.
Turn the steaks and continue to cook for 3- 5 minutes or until steaks reach desired temperature using a digital meat thermometer. We cooked these steaks to about 125°.
Remove steaks to a clean sheet pan and allow to rest 10 minutes before serving. Tent with foil to keep warm.
Notes
Temperature for Strip Steaks:
Rare: 130°
Medium Rare: 140°
Medium: 155°
Wrap leftover steak in a couple of layers of plastic wrap and store in the refrigerator up to 4 days.Reheat sliced steak in a hot skillet coated with butter or olive oil. Stir occasionally until heated through.
