- 3 pound beef roast bottom round or rump roast
- 1 tablespoon olive oil
- 2 tablespoons Out Grilling SPG Seasoning or favorite beef seasoning blend
Prepare the Big Green Egg or charcoal grill for indirect cooking at 275°F using hickory or oak wood chunks for a mild smoke flavor.
Coat the beef roast with olive oil, then season generously with Out Grilling SPG Seasoning or favorite beef seasoning.
Place the roast directly on the grill grates. Cook until internal temperature reaches 135°F for medium rare – about 15 minutes per pound.
Let the roast rest for 20 minutes or up to 1 hour. Wrap tightly in plastic wrap and chill for at least 4 hours or overnight. This helps you slice it ultra-thin for sandwiches.
Once chilled, slice thinly with a sharp knife or meat slicer.
Store sliced roast wrapped tightly with plastic wrap in the refrigerator up to 4 days.
Vacuum seal and refrigerate up to 7 days or freeze up to 3 months.
Oven Directions:
- Preheat oven to 450°.
- Place seasoned roast on a wire rack inside a roasting pan, cook for 15 minutes.
- Lower oven to 300°, roasting until internal temp reaches 135°F (10-15 minutes per pound).
- Rest, wrap, chill, and slice as above.
