Prepare a grill fire to 350° using hickory or oak for smoke flavor. Soak bamboo skewers in water for about 10 minutes.
Cut steaks into 1 1/2 inch pieces. Peel and devein the shrimp. Cut the onion into large petals.
Thread steak, shrimp and onion petals onto skewers as shown and place on a rimmed baking sheet.
Spray or brush skewers with olive oil on both sides.
Season with rub.
Place kabobs onto a hot grill over indirect fire. Cook with the grill closed for 5 minutes. Turn kabobs and cook another 3 minutes.
Remove kabobs from grill and add a layer of heavy duty aluminum foil to the grill grate. Return kabobs to the grill and brush with bbq sauce. Close the grill and cook 2 minutes. Flip the kabobs and brush with barbecue sauce. Continue to cook another 2-3 minutes until steak bites and shrimp reach at least 145° using a digital meat thermometer.
Remove from grill and serve immediately.
- Storage: To store leftovers, remove from skewers and place in an airtight container in the refrigerator for 2-3 days.
- Reheat: Place steak and shrimp in a pan with 2 tablespoons of water, cover and cook over medium heat, stirring after a few minutes, cooking until heated through.
- Variations: Add additional vegetables to the skewers if desired. Bell peppers, mushrooms or zucchini are great options.
