Prepare a grill fire to 300° using hickory or pecan for smoke flavor.
Pat ribs dry with paper towels and place on a rimmed baking sheet. Remove the membrane if desired.
Coat the ribs with olive oil and sprinkle with dry rub.
Cook with the grill closed for one hour.
Brush with a thick coating of sauce and continue to cook with the lid closed until ribs reach 200° using a digital meat thermometer.
Remove from grill to a clean sheet pan and tent with foil. Rest 15 minutes before slicing.
Store leftover ribs in a zip lock bag or air tight container in the refrigerator up to 4 days,
Reheat wrapped in foil in a 350° oven for 15 minutes or in a covered skillet with additional sauce over medium heat. Flip after a few minutes to heat all the way through.
