Ingredients

  • 1 salmon filet 1 1/2- 2 pounds
  • ¼ cup honey
  • 2 tablespoons finely chopped pecans
  • 1 tablespoon minced garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon finely chopped rosemary
  • 2 tablespoons salted butter melted

Instructions

  • Prepare a grill fire to 300° using pecan or hickory for smoke flavor.
  • Remove salmon from packaging, pat dry with paper towels and place on a baking sheet.
  • In a small bowl, add honey, finely chopped pecans, garlic, smoked paprika, finely chopped rosemary and melted butter. Whisk together until well combined.
  • Place the salmon filet, skin side down over indirect fire. Cook with the grill closed about 10 minutes.
  • Brush the honey pecan sauce over the salmon, do not turn the salmon.
  • Close the grill and continue to cook until salmon reaches 135° - 140° for medium finish, using a digital meat thermometer. Total cooking time will depend on the size of the salmon, our total cook time was about 20 minutes.
  • Remove salmon to a clean baking sheet, rest 5 minutes.
  • Slice with a sharp knife and serve immediately.
