  • Prepare a grill fire to 350° using hickory for smoke flavor.
  • Pat pork chops dry with paper towels. Place on a rimmed baking sheet and lightly coat both sides with olive oil and season with salt and pepper.
  • Cook over indirect grill fire with the grill closed about 5 -7 minutes.
  • Turn the pork chops and drizzle with sweet mustard, brush to glaze evenly. Close the grill and continue to cook another 5-8 minutes or until the pork chops reach 145° using a digital meat thermometer.
  • Remove from the grill onto a serving platter, sauce side down.
  • Drizzle with sweet mustard sauce and rest 5 minutes before serving.

Notes

Store leftover pork chops in an airtight container in the refrigerator up to 4 days.
Reheat sliced pork chops in a skillet coated with olive oil over medium heat, adding additional sauce. Stir occasionally until heated through.
