Ingredients

  • 4 thick-cut boneless pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon coarse ground pepper
  • 2 tablespoons salted butter
  • 2 tablespoons minced garlic
  • ¼ cup honey
  • ½ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground chili flakes or cayenne

Instructions

Make the Sauce:

  • Sauté minced garlic in butter over low heat for about 3 minutes, stirring often.
  • Add honey, brown sugar, apple cider vinegar, smoked paprika, salt and ground chili flakes. Continue to cook for 5 minutes, stirring often. Divide the sauce in half, use half for grilling and the other half for serving.

For the Pork Chops:

  • Pat pork chops dry with paper towels.
  • Drizzle with olive oil, spreading over both sides.
  • Season with kosher salt and coarse pepper.
  • Prepare a grill fire to 350° using hickory or pecan for smoke flavor.
  • Cook pork chops over indirect fire with the grill closed 5 minutes.
  • Brush with honey garlic sauce and flip the pork chops. Brush the other sides with sauce and continue to cook with the grill closed another 7- 10 minutes, until internal temperature reaches 145° using a digital meat thermometer.
  • Remove pork chops to a serving platter and rest 5 minutes before serving.
  • Reheat remaining sauce if needed and serve over pork chops.

Notes

How to Store and Reheat:

  • Store leftover pork chops wrapped in plastic wrap or aluminum foil in the refrigerator up to 4 days.
  • Store honey garlic sauce in an airtight container in the refrigerator up to 3 weeks.
  • Reheat pork chops, sliced in a skillet with honey garlic sauce over medium heat, stirring until heated through.
