Mozzarella Stuffed Meatloaf

Mozzarella Stuffed Meatloaf is a delicious and hearty meal that is full of incredible flavor. Made with seasoned ground beef, gooey mozzarella cheese and topped with tomato sauce.

Ingredients

  • 2 pound ground beef
  • ¼ cup + 1 tablespoon steak rub divided
  • 2 large eggs
  • ¼ cup old fashioned oats
  • 5 ounce block mozzarella cheese
  • 1 cup tomato sauce
  • 1 ½ teaspoons balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 ½ teaspoons granulated garlic
  • 1 ½ teaspoons onion powder
  • 1 ½ teaspoons dried basil
  • 1 ½ teaspoons dried thyme
  • 1 ½ teaspoons dried oregano
  • ½ teaspoons kosher salt
  • ½ teaspoons black pepper

Instructions

  • Combine ground beef with 1/4 cup of steak rub in a bowl.
  • Add eggs, diced onion and oats. Mix until well combined.
  • Cut mozzarella block into a 5 ounce chunk. 
  • Mold ground beef mixture into a loaf.
  • Make a well in the center of the ground beef and place the mozzarella inside.
  • Form the ground beef around the mozzarella. 
  • Prepare a grill fire to 320° using hickory or pecan for smoke flavor.
  • Place the meatloaf over indirect fire. Sprinkle the top with 1 tablespoon steak rub. Cook with the grill closed for 45 minutes. 
  • Meanwhile, mix the tomato sauce with balsamic vinegar, brown sugar, basil, thyme, oregano, salt and pepper.
  • Top the meatloaf with about 1/2 of the tomato sauce and continue to cook another 15 minutes.
  • Check internal temperature of meatloaf, near the center and continue to cook until meatloaf reaches 160°.
  • Remove from grill to a serving platter. Rest 10 minutes before slicing and serving. Serve with remaining tomato sauce if desired.

Notes

How to Store and Reheat:

Store leftover meatloaf wrapped in plastic wrap or foil in the refrigerator up to 3 days. Store tomato sauce in an airtight container in the refrigerator up to 3 weeks.
Reheat slices in a skillet coated lightly in olive oil. Cook over medium heat, turning after about 3 minutes, continue to cook until heated through.
Serve grilled meatloaf with mashed potatoes, grilled corn on the cob and cornbread muffins for a complete meal.
