- ⅓ cup brown sugar
- 1 tablespoon granulated garlic
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
- ¾ cup olive oil
- ½ cup orange juice
In a bowl combine brown sugar, garlic, cumin, chili powder, salt and pepper.
Add the olive oil and orange juice and whisk together.
Add your meat to a zip top bag and pour marinade over the top. Close the bag, squeezing out the extra air. Turn the bag over several times, coating the meat in the marinade.
Refrigerate at least 4 hours and up to 24 hours.
Yield: This marinade makes enough for 2 pounds of steak, chicken or shrimp.
How to Grill Fajitas:
- Prepare a grill fire to 350° using hickory or pecan for smoke flavor.
- Place the marinated meat and vegetables over direct fire and cook for 5 minutes with the grill closed. Flip the meat and vegetables and continue to cook another 5-8 minutes until desired temperature is reached using a digital thermometer. We cooked ours to about 145° for medium.
- Remove from grill and serve with Spanish rice and your favorite toppings.
