Ingredients

  • cup brown sugar
  • 1 tablespoon granulated garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • ¾ cup olive oil
  • ½ cup orange juice

Instructions

  • In a bowl combine brown sugar, garlic, cumin, chili powder, salt and pepper.
  • Add the olive oil and orange juice and whisk together.
  • Add your meat to a zip top bag and pour marinade over the top. Close the bag, squeezing out the extra air. Turn the bag over several times, coating the meat in the marinade.
  • Refrigerate at least 4 hours and up to 24 hours.

Notes

Yield: This marinade makes enough for 2 pounds of steak, chicken or shrimp.

How to Grill Fajitas:

  1. Prepare a grill fire to 350° using hickory or pecan for smoke flavor.
  2. Place the marinated meat and vegetables over direct fire and cook for 5 minutes with the grill closed. Flip the meat and vegetables and continue to cook another 5-8 minutes until desired temperature is reached using a digital thermometer. We cooked ours to about 145° for medium.
  3. Remove from grill and serve with Spanish rice and your favorite toppings.
