Parmesan Crusted Beef Tenderloin

Ingredients

  • 1 beef tenderloin 5- 6 pounds
  • 2 tablespoons melted butter
  • ½ cup grated parmesan cheese
  • 1 tablespoon dried onion flakes
  • 1 tablespoon dried thyme
  • 1 ½ teaspoons brown sugar
  • 1 ½ teaspoons fresh rosemary
  • 1 ½ teaspoons granulated garlic
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground pepper

Instructions

  • If you are trimming your own tenderloin, remove the silver skin and cut the beef into 2 pieces. 
  • Brush the tenderloins with melted butter. This will help the parmesan mixture to adhere to the beef.
  • In a bowl combine the Parmesan cheese, herbs, spices, brown sugar, salt and pepper. Mix well.
  • Sprinkle the parmesan mixture over the top of the tenderloin in a thick layer. Pat the parmesan mixture into the beef. 
  • Set aside while you prepare a grill fire to 350° with hickory or pecan for smoke flavor.
  • Grill tenderloin over indirect fire with the grill closed for about 25- 30 minutes.
  • Check with a digital thermometer and continue to cook until desired doneness is reached about 45 minutes total for rare, about 1 hour for medium rare. 
  • Remove from grill to a cutting board and allow to rest about 15 minutes before serving. 
  • Slice and serve immediately. 

Notes

TEMPERATURES FOR BEEF TENDERLOIN:

  • Rare:  120- 125°
  • Medium Rare: 130°
  • Medium: 145°

How to Store and Reheat:

  • Store leftover beef tenderloin in an airtight container in the refrigerator up to 4 days. 
  • Slice and reheat in a skillet with melted butter over medium heat. Cook about 1- 2 minutes per side until heated through.
