- 1 beef tenderloin 5- 6 pounds
- 2 tablespoons melted butter
- ½ cup grated parmesan cheese
- 1 tablespoon dried onion flakes
- 1 tablespoon dried thyme
- 1 ½ teaspoons brown sugar
- 1 ½ teaspoons fresh rosemary
- 1 ½ teaspoons granulated garlic
- ½ teaspoon kosher salt
- ½ teaspoon fresh ground pepper
If you are trimming your own tenderloin, remove the silver skin and cut the beef into 2 pieces.
Brush the tenderloins with melted butter. This will help the parmesan mixture to adhere to the beef.
In a bowl combine the Parmesan cheese, herbs, spices, brown sugar, salt and pepper. Mix well.
Sprinkle the parmesan mixture over the top of the tenderloin in a thick layer. Pat the parmesan mixture into the beef.
Set aside while you prepare a grill fire to 350° with hickory or pecan for smoke flavor.
Grill tenderloin over indirect fire with the grill closed for about 25- 30 minutes.
Check with a digital thermometer and continue to cook until desired doneness is reached about 45 minutes total for rare, about 1 hour for medium rare.
Remove from grill to a cutting board and allow to rest about 15 minutes before serving.
Slice and serve immediately.

How to Store and Reheat:
- Store leftover beef tenderloin in an airtight container in the refrigerator up to 4 days.
- Slice and reheat in a skillet with melted butter over medium heat. Cook about 1- 2 minutes per side until heated through.
