Grilled Garlic Butter Shrimp is a quick and easy meal for any night of the week. Grilled shrimp coated in decadent toasted garlic butter can be ready in about 15 minutes. Great as a main dish or easy party appetizer.

- ¼ cup salted butter
- 2 large garlic cloves minced
- 1 teaspoon ground rosemary
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 teaspoon brown sugar
- 1 ½ pounds jumbo shrimp peeled and deveined
- fresh parsley optional garnish
Prepare a grill fire to 300° with pecan chunks for smoke flavor.
Make the garlic butter in a small skillet, melting butter over low heat.
Add minced garlic, stir frequently until garlic is toasted and lightly browned.
Remove from heat, stir in rosemary, thyme, and pepper, stir to combined. Set aside 2 minutes.
Stir in brown sugar and set aside.
Grill shrimp over indirect fire for about 5 minutes with the grill closed or until shrimp reaches 145°, checking with a digital thermometer. Shrimp will be pink and curled, no longer translucent.
Remove to a rimmed sheet pan.
Drizzle with garlic butter and toss to coat.
Garnish with parsley and serve immediately.
Recipe can be doubled as needed.
Store leftover shrimp in an airtight container in the refrigerator up to 3 days.
Reheat in a skillet coated in melted butter over low heat about 3- 5 minutes, turning half way through.
