Stuffed Onions

Stuffed Onions are a flavorful and delicious side dish for any meal on the grill. Caramelized onions mixed with cheese, herbs and spices stuffed inside onion shells are grilled alongside steaks, chicken or pork for an easy addition to any meal.

Ingredients

  • 2 large white onions
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 ounces cream cheese softened
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon granulated garlic
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • fresh parsley optional garnish

Instructions

  • Cut the ends off of whole onions so that they will sit flat. Slice in half and remove the insides of the onions, leaving about 2-3 layers as a shell. Place a small onion slice into the bottom of each half, so that the filling will not run out of the shell. 
  • Slice the insides of the onions and cook in butter, in a small pan over medium heat, stirring often until caramelized.
  • Add softened cream cheese, shredded mozzarella, garlic, thyme, oregano, basil, salt and pepper. 
  • Mix until well combined.
  • Spray onion shells with olive oil or lightly brush coating the insides and outsides.
  • Stuff onions with filling. 
  • Cook onions over indirect fire at about 325- 350° with the grill closed for about 15- 20 minutes.
  • When onions are lightly browned and filling is hot, remove to a serving platter. Garnish with parsley if desired.
  • Serve immediately.

Notes

Recipe can be doubled as needed.
Store leftover onions in an airtight container in the refrigerator up to 3 days.
Reheat in an air fryer or oven at 350°. Air fryer cooking time should be about 3- 5 minutes and oven time about 8- 10 minutes.
