Grilled Strip Steaks

Ingredients

  • 4 Strip Steaks
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 2 teaspoons onion flakes
  • 1 teaspoon granulated garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon onion powder

Instructions

  • Remove steaks from packaging and pat dry with a paper towel.
  • Drizzle with olive oil and rub over both sides.
  • In a small bowl combine brown sugar, onion flakes, garlic, smoked paprika, salt, pepper, onion powder and thyme.
  • Sprinkle rub over both sides of the steaks, pressing it into the steaks.
  • Rest steaks at room temperature until the grill is ready.
  • Build a grill fire to about 400° using hickory or pecan for smoke flavor.
  • Cook steaks over indirect fire. Lower grill temperature to about 350°, close the lid and cook 3 minutes.
  • Turn steaks and continue to cook for 3- 5 minutes until steaks reach desired doneness. Check internal temperature with a digital thermometer.
  • Remove from grill and rest steaks about 10 minutes before serving.

Notes

INTERNAL TEMPERATURES FOR STRIP STEAKS:

  • Rare: 130°
  • Medium Rare: 140°
  • Medium: 155°
Store leftover steak in an airtight container or wrapped in plastic wrap or aluminum foil in the refrigerator for up to 3 days.
Reheat steak in a skillet with olive oil over medium heat. Steak can be sliced before reheating to reheat quickly. Steak can also be reheated in an air fryer for about 3- 4 minutes at 350°
