- 4 Strip Steaks
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 2 teaspoons onion flakes
- 1 teaspoon granulated garlic
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- ½ teaspoon dried thyme
- ½ teaspoon onion powder
Remove steaks from packaging and pat dry with a paper towel.
Drizzle with olive oil and rub over both sides.
In a small bowl combine brown sugar, onion flakes, garlic, smoked paprika, salt, pepper, onion powder and thyme.
Sprinkle rub over both sides of the steaks, pressing it into the steaks.
Rest steaks at room temperature until the grill is ready.
Build a grill fire to about 400° using hickory or pecan for smoke flavor.
Cook steaks over indirect fire. Lower grill temperature to about 350°, close the lid and cook 3 minutes.
Turn steaks and continue to cook for 3- 5 minutes until steaks reach desired doneness. Check internal temperature with a digital thermometer.
Remove from grill and rest steaks about 10 minutes before serving.
INTERNAL TEMPERATURES FOR STRIP STEAKS:
- Rare: 130°
- Medium Rare: 140°
- Medium: 155°
Store leftover steak in an airtight container or wrapped in plastic wrap or aluminum foil in the refrigerator for up to 3 days.
Reheat steak in a skillet with olive oil over medium heat. Steak can be sliced before reheating to reheat quickly. Steak can also be reheated in an air fryer for about 3- 4 minutes at 350°
