Balsamic Chicken and Broccoli Skewers

Balsamic Chicken and Broccoli Skewers are tender and delicious with vibrant flavors. A great meal to make on the grill for any night of the week.

Ingredients

For the Skewers

  • 2 pounds chicken tenders
  • 1 head fresh broccoli
  • ¼ cup balsamic vinegar
  • ¼ cup lemon juice
  • ¼ cup olive oil - plus more for brushing skewers
  • ¼ cup brown sugar
  • 2 teaspoons ground rosemary
  • 1 teaspoon granulated garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

For the Cheese Sauce:

  • 1 tablespoon butter
  • 1 tablespoon all purpose flour
  • 1 cup milk
  • 12 oz Velveeta cubed or shredded cheddar cheese
  • ¼ teaspoon granulated garlic
  • teaspoon smoked paprika
  • teaspoon kosher salt
  • teaspoon black pepper

Instructions

  • Cut chicken into 1 1/2 - 2 inch cubes.
  • Cut broccoli into spears.
  • Mix marinade in a bowl: combine balsamic vinegar, lemon juice, olive oil. brown sugar, rosemary, garlic, thyme, basil, salt and pepper. Whisking until well combined. Set 1/3 cup of marinade aside for grilling.
  • Add chicken, stir to coat well. Cover and refrigerate one hour.
  • Prepare a grill fire to about 300° with hickory or pecan.
  • Thread chicken and broccoli onto skewers.
  • Spray or brush skewers with olive oil.
  • Place skewers over indirect fire.
  • Brush with reserved marinade.
  • Cook with the grill closed for about 15 minutes, brush with marinade once more. Cook another 10-15 minutes, check with digital thermometer, cooking until internal temperature reaches 165°. 
  • Remove from grill and cover with foil, resting while you prepare the cheese sauce.

For Cheese Sauce:

  • Add butter and flour to a saucepan. 
  • Cook over medium heat, whisking continually about 2 minutes.
  • Add milk and whisk to combine. Cook about 3 -5 minutes until sauce starts to thicken.
  • Add cheese and whisk in seasonings. 
  • Whisk until smooth. 
  • Remove from heat.
  • Drizzle over skewers and serve immediately. 

Notes

The cheese sauce is optional for this recipe. The creaminess is a great compliment to the tangy balsamic glaze.

How to Store and Reheat:

Remove chicken and broccoli from skewers and store in an airtight container in the refrigerator up to 3 days.
Reheat in a skillet with 1 -2 tablespoons of water over medium heat. Stir frequently until heated through, about 3- 5 minutes.
